Carrot Cake

225gCaster Sugar
75gButter
3Eggs
125gPlain Flour
125gWholewheat Flour
2tspBicarbonate of Soda
½tspSalt
2tspCinnamon
1tspNutmeg
¼ptYoghurt
200gGrated Carrot
100gGrated Apple
100gRaisins
100gWalnuts
  • Cream butter & sugar
  • Add eggs
  • Sieve in flour, soda, salt & cinnamon
  • Add Yoghurt
  • Fold in carrots, apple, raisins & nuts
  • Put in a greased 8" cake tin
  • Bake @ gas mark 4 for 45 minutes to 1 hour


Icing
12½gButter
75gIcing Sugar
½tspVanilla Essence
200gCream Cheese
  • Combine cream cheese and butter in a mixing bowl
  • Beat until creamy
  • Add icing sugar
  • Beat until smooth
  • Stir in vanilla
